Lecithin is used as an emulsifier; a release agent; a dispersing, wetting and instantizing agent; a fat replacer/extender, and and as antioxidant.

	Bleached Organic Soy Lecithin: Bleached lecithin is functionally identical to unbleached lecithin. It differs only in color and is used in applications where a lighter color is desired. Available in 10 lb. buckets, 50 lb. pails, and 450 lb. drums. Bleached Organic Soy Lecithin Spec Sheet
	Dry Blend Organic Soy Lecithin: For some products and applications, a dry lecithin blend may be more convenient. For these products and situations, we offer a dry blend organic soy lecithin.
